If you hang out at all on Pinterest, you’ve probably noticed that there is no end to the number of super cute treats that keep showing up. I am constantly amazed at both the creativity and skill that some people have. I would never think to decorate cupcakes like snow cones or create watermelon pops.
Besides, it is too hot outside to spend a bunch of time in the kitchen working that out (even if the oven is off). What I prefer, is something quick, easy and shareable (that harem of men needs sustenance). That is why I have taken to freezing coffee. Just pour the coffee (I use whatever is leftover in the pot in the morning after I fill my thermos) into an ice cube tray, pop into the freezer and wait (or go to work). Those coffee cubes are then perfect for whipping up delicious frozen coffee beverages in the evening.
Frozen Coffee Delight
5-6 coffee cubes (see above)
5-6 normal ice cubes
1/2 cup of milk (whatever variety you like)
Chocolate syrup (I use Hershey and a lot of it)
Whipped cream (optional)
Chocolate shavings (optional)
Your favorite liquor (Bailey’s or Kahlua are my go-tos)(also, optional)
Place coffee cubes, ice cubes, milk and chocolate syrup (plus liquor) into a blender. Give it a good whirl until things are pretty well blended. Pour into a tall glass. Garnish with whipped cream, more chocolate syrup, chocolate shavings and anything else your heart desires. Drink with your feet up and good book in hand.
