Summer Refreshment by Emily Cale

The weather took a turn this last week and the temperature was cranked up from warm to HOT! Instead of roasting outside, I stuck to hanging out in the air conditioned comfort of my apartment. To help keep the summer at bay a few more weeks, I also found a great blended beverage that helped to cool me down. It’s perfect timing, too, since watermelon seems to have just come into season.

Ingredients:

1/4 of a seedless watermelon (cut into cubes)
1/4 cup of frozen (or fresh) strawberries
1 tablespoon of sugar
A handful of ice cubes
(optional) white rum

Directions:

Place all the ingredients into a blender and give it a good round of blending. How thick and chunky you make it is up to you. I like mine pretty smooth. It’s excellent in a tall glass with a straw. I’ve substituted this for my morning smoothie a few times and it has definitely kept me satisfied. A few chia seeds wouldn’t hurt if you wanted to up the nutritional content.
