Maybe less baking and more cooking. I’ve never really figured out where the line for that is. This is a wonderful, quick breakfast that is amazingly delicious. I don’t typically like eggs, but I crave them from time to time. This is the best way I’ve found to get something I’m not terribly fond of (eggs) with something I love (avocado). Ready?



1 avocado

2 eggs

salt and pepper to taste



1. Preheat oven to 375F

2. Cut avocado in half and remove pit. Scoop out a little extra with a spoon so that the hole in the middle of each half is large enough to hold an egg. Place each half on a cookie sheet or a casserole pan

3. Break open eggs into each end of the avocado.

4. Place in oven for roughly 30 minutes.

5. Remove from oven and sprinkle with salt and pepper.

6. Eat.


You can mix it up and add salsa, cheese, or pretty much anything you want. My husband and I often split one avocado between us, but you don’t have to share 🙂
