Cocktail Hour with Lisa Fox


It’s summer and I’m sure it’s hot somewhere, though it has not ever gotten very hot here. Regardless of the actual temperature outside, one of the very best things about summer is drinking frozen cocktails with brightly colored umbrellas in them. Here are some great and classic recipes for awesome frozen drinks to enjoy alone or with friends. Warm weather and tiny umbrellas optional.

Pina Colada


2 oz coconut rum (Malibu or Parrot Bay)
2 oz cream of coconut (Coco Lopez)
1 oz pineapple juice
1 cup crushed ice
Blend! Drink!

For extra fun: Add a splash of cherry juice or frozen strawberries or a shot of espresso or more rum!



1 oz vanilla vodka
1 oz coffee liqueur (Kahlua)
1 oz Bailey’s Irish cream
½ oz cream
1 cup crushed ice

Blend! Drink!

For extra fun: Pour chocolate syrup around the inside rim of your glass or sprinkle grated chocolate on top or instead of cream use ice cream or add more Bailey’s!

Frozen Daiquiri


1 ½ oz light rum
½ oz triple sec
1 tablespoon lime juice
1 cup crushed ice

Blend! Drink!

For extra fun: Add strawberries or blueberries or watermelon or mango or more rum!
